I know that this post will be horribly out of fashion, but I just can’t help myself. Cast iron is great! For starters, it’s very cheap, which means that you won’t break your bank account like you would would on high quality copper. This means a lot to me, since I love buying kitchen stuff.
Another nice thing is that it is made up of the stuff your body needs. We all need iron in our diets, and as a vegetarian, I don’t need to worry about this as much if I use cast iron. I highly doubt that anyone could make the same argument for Teflon. If fact, I have read in many places that Teflon is bad for fetuses. The manufacturers always say that as long as the coating is not scratched up, then you will be fine, but how often do you see pristine Teflon coated pan outside of the store?
And lastly, it is the cooking implement of choice for all old-fashioned gals. All you need to do is go to an antique stores to see that this is true!
