Mama Del’s cornbread stuffing is what made me want to make my own vegetarian turkey, instead of buying one. Who could bear to eat the paste that they call stuffing that is put into store bought tofurky when you could have one that is stuffed with all this savory goodness?
I never got to meet Mama Del (she was the great aunt of an ex-boyfriend of mine), but she lives on with her fantastic stuffing recipe.
- 4 c cornbread (I highly recommend this recipe)
- 2 onions
- 1 c celery
- 1/4 c chopped fresh sage
- 1 tsp marjoram
- 1 tsp rosemary
- 16 oz broth
- salt and pepper
- Preheat to 350F
- Combine all ingredients, except milk, then add milk until all of the stuffing is very moist.
- Cook for 45 minutes, being careful that the stuffing doesn’t dry out.
All these measurements are approximate, because Mama Del never wrote down the recipe, so I usually just throw things in without measuring. This stuffing was fantastic in my veggie turkey and would probably be great in a real turkey as well. You can get the recipe that I used for the veggie turkey here. This recipe was nice and moist, and much more tender than any fake meat that I have ever eaten.
